Tomato and Avocado Toasts

Tomato and Avocado Toasts

Serves 2

  • 4 slices thick, sturdy bread (I had some sourdough, and it was great. Use what you like, but do not use sandwich bread)
  • 1 large avocado
  • 1 large or 2 small ripe tomatoes
  • 2 T feta or goat cheese
  • salt/pepper (I am in love with the California Seasoned Pepper from Penzeys, by the way)
  • 1 cucumber, sliced

Mash avocado in a bowl with the cheese. I used feta tonight because I had an open package from making Tabouli (Tabbouleh?) today, but really think goat cheese would be great as well. Season with salt/pepper to taste and if you want it to stay pretty, squeeze a wedge of lemon into it. Toast your bread (I'd recommend making it rather toasty to stand up to juices from the tomato), then spread each slice with the avocado mixture. Alternately .layer tomato and cucumber on top and season to your liking again with salt/pepper. That's it! A great, fast, fresh summer lunch or light dinner.
