So my husband is at some work dinner tonight. Know what that means? CARBS and CHEESE are on my dinner plate tonight! Yippee! I have been dying for some kind of grilled cheese, and this month's Cooking Light suggested the perfect combo--avocado and tomato. Simple, perfect, sinful. I'll be eating these all summer once my garden tomatoes arrive, but I'm not complaining about my greenhouse-grown grocery store tomatoes tonight. Happy Tuesday!
Avocado and Tomato Grilled Cheese Sandwiches

- sliced avocado
- thinly sliced tomato, well seasoned with salt and pepper
- sharp white cheddar cheese
- sourdough bread
Butter your bread, layer sandwich ingredients, and grill til the cheese oozes. Serve with a nice salad to alleviate any guilt you may have. I might make this again for breakfast and add an egg. I'm crazy like that.
