aka, Matt's favorite beef.
-no clue where this recipe came from, it's just scribbled on a recipe card. My apologies.
3-4 lb beef roast (whatever cut you like)
1 envelope dry Italian dressing mix
1 can or bottle of beer (anything works, though I'd steer away from a wheat beer or something too fruity)
Spray the crock pot and place roast inside. Sprinkle packet of dressing on top, pour beer over all. Cook on high for 4-5 hrs or low for 9-10 hrs. Shred beef with fork, serve on toasted buns (top with cheese if you'd like) and serve with cooking liquid au jus for dipping. Easy peasy.
