- 1 pkg frozen puff pastry, thawed (2 sheets)
- 8 oz wheel of Brie
- 1 c. cranberry sauce (homemade or from the can. Whatever you like.)
Use a pizza cutter or sharp knife to cut each sheet of puff pastry into 12 rectangles. Push each rectangle into a mini muffin tin (so you will have 24). Cut the rind off the Brie and cube it. Place a cube or two of Brie into each puff-pastry lined cup, and top with a spoon of cranberry sauce. Bake at 375 for 15-20 minutes until puffed and golden.
The cranberry brie bites were a cinch, beautiful, and totally delicious. I was shocked at how well they reheated in the microwave for a couple of days.
