Easy Rhubarb Freezer Jam

-8 cups chopped rhubarb
-2 cups sugar
-2 t orange zest (from 1 large orange)
-1/3 cup orange juice (from that orange you just zested)
-1/2 cup water.
Combine all in large pot and bring to boil. Reduce heat, and simmer, stirring occasionally until fruit is soft and jam has thickened. It will thicken significantly as it cools, so don't expect it to look like finished jam at this point. I cool it and then put it in freezer containers that Ball makes. I like to store my jam in smaller amounts, so I got 6 jars that I filled with about 2/3 cup.
