Garlic Lime Roasted Salmon

This salmon has become my go-to. I've made it at least 4 times. In a desperate rush one night I realized I didn't have a whole jalapeno in the fridge as I thought, which is grated into the rub and is an integral part of the recipe, and I had to take a few deep breaths and put on my thinking cap. I decided to sprinkle chipotle chili powder over the top to add spice, and I prayed it would magically transform the dish with it's 'a little something special' smokiness. And it did. No jalapeno necessary, kids. I make it this way all the time now, and it's how I'm giving it to you. If you are looking for a lovely all-purpose salmon recipe you can stop your search. I love leftovers flaked in a salad for lunch with lots of crisp lettuce, tomatoes, cucumbers, red bell peppers, black beans, some avocado and a drizzle of that life-changing Bolthouse Farms Salsa Ranch dressing.

Garlic Lime Roasted Salmon

  • 1 lb salmon, thawed and pat dry if frozen. I buy mine at Trader Joe's and my rules are: "wild caught product of the USA". I like both their Silver Coho and Sockeye Varieties
  • zest of half a lime
  • juice of half a lime
  • 1 T. olive oil (I used avocado)
  • 1 garlic clove, minced
  • chipotle chili powder to sprinkle on top
  • salt and pepper

Lay salmon on a parchment or foil lined baking sheet. Whisk zest, juice, oil, and garlic together in a small dish and pour over salmon. Sprinkle lightly or liberally (depending on your spice desire) with chipotle powder. Also sprinkle liberally with salt and pepper. Bake at 400 degrees for about 20 min (this will depend on how thick your fish is, so just watch it) until fish flakes easily with a fork. Serve with lime wedges on the side. We love it with roasted green beans and sweet potatoes.
