Tuna Melts a la Mel
Combine albacore tuna, a squeeze of Mayo, some yellow mustard, salt and pepper to taste. Spread onto a hearty piece of bread (yep, I used my faithful sourdough), top with sliced tomato (optional; I love this, but I didn't do it with the tomato soup. Thought that might be overkill), and a slice of cheese (I've used Swiss and colby jack). Broil until cheese melts and bread is nice and toasty.
Pair with the Classic Tomato Soup and you have lunch perfection!
