Hot Chocolate Truffle Balls

I have found what I believe to be the epitome of hot chocolate deliciousness, and it is rolled up in these darling little truffle balls.  Essentially, you make a quick little ganache in the microwave with chocolate chips and heavy cream, chill it, and then roll it into balls to keep in the freezer. When you want the hot chocolate of your dreams, you just drop a ball in a mug of milk, heat, stir, and let the magic happen. My children think I am the best mom ever since I made these yesterday and have allowed them a hot chocolate snack (with a generous amount of mini marshmallows on the side) for the last two consecutive days. I can be cool sometimes. You will want to double this recipe (I did) and load up your freezer. Share some with friends, this would make a nice little holiday gift.

You will get about 10 balls from this, so consider doubling or tripling..

-2 cups chocolate chips. It would be a good idea to go for the good stuff here--I decided on Ghirardelli, and I like bittersweet chocolate chips so I used those. Semi-sweet would be the norm and a bit less dark.

-1 cup heavy cream

-1/8 t. salt

Place all ingredients into a microwave safe bowl and microwave at 1 minute intervals, stirring thoroughly each time. Make sure you stir this well and do not over cook, or the chocolate will seize--and nobody wants a bowl of seized up chocolate. It will look shiny and smooth when it's ready. Let it cool on the counter for about 10 minutes, then place in fridge for at least 2-3 hours, or until the mixture is scoopable. At this point, roll the mixture into 1/4 c. balls. I stacked two of my 2 T scoop balls on top of each other to get 1 ball. Make sense? Put them back in the fridge for at least 15 minutes, then wrap each one in plastic wrap, place in a Ziploc, and throw in the freezer. When you are ready for some chocolate love, place 1 unwrapped ball in a mug of milk (we used dairy milk yesterday, but I did make a mug with vanilla unsweetened almond milk today and it was luxurious as well) and microwave for 1 min, stir, then microwave about 1 minute more, or until hot. Stir until the chocolate is fully melted and you have a creamy, frothy mug of perfection.
